I know it’s not a good enough excuse but I’ve been so busy with work lately that I’ve been completely neglecting my kitchen love life. When I started cooking early this year (yes, I’m a late bloomer!) I was so on fire! From being a kitchen phobe for years, it was suddenly like young love, sweet love. I devoured all these online recipes, I signed up for cooking classes, I even watched videos on YouTube! I was Baby Bibo! But then I just got really crazy busy and suddenly I found myself ordering more take out and quick dinners in restos. It proved more costly for us and it also made me feel a bit guilty, not being able to feed my husband proper home cooked meals. I’m lucky that Patrick doesn’t really pressure me to cook (as he also understands that I have long work days and we don’t have any household help too) but I know that it makes him happy when I do prepare something for him. So I think I have to really commit to getting my cooking groove back!
I got an email from Del Monte a few weeks back, inviting me to embark on a no-pressure-just-try-it-and-have-fun kind of project. I was nervous to accept the challenge but then I thought it was the perfect way to jumpstart my (re)love for cooking. I was actually very transparent with them when we met about this project. I told them that I was a novice cook, a clueless newbie, someone who doesn’t have the natural Martha Stewart/Nigella Lawson/Rachel Ray flair when it comes to cooking. I know that majority of women are naturals in the kitchen…but I probably was absent when God was distributing culinary talents! Hahaha! I’m part of the minuscule population of women who need to put a bit more effort into it because it’s not something that comes organically. It’s a good thing they still agreed to have me on board, despite my many “disclaimers”. Hahaha! In fact, they said my lack of culinary prowess might make this project even more interesting. And besides, the whole idea behind the Quick N Easy line is to make cooking—Quick and…..EASY! You got it!!! Napakahusay mo talaga!!! 🙂 🙂

The ingredients you’ll need for this dish—these are things you might already have in your pantry! Very simple and affordable. Nothing too fancy schmancy 🙂
Hair tied, check! Hands clean, check! Apron, check! It’s time to cook some Chicken Satay with Quick N Easy Kare-Kare Mix! Let’s do this!!!
You can use this Kare-Kare mix for traditional Kare-Kare, Seafood Kare-Kare,
or in this case–we’re using it for CHICKEN SATAY!!! How versatile, noh? 🙂
This is possibly the easiest step, mixing everything together. The Quick N Easy mix has all the ingredients and spices in one packet–so this will save you a lot of time and moolah
I gave my “chicks” a bit of a marinade massage and got down and dirty 🙂 Make sure you wash your hands thoroughly before doing this! NO to GERMS, guys, well except Kuya Germs. I love him!
My favorite part: the grilling! Here’s a little tip I learned, make sure you soak your BBQ sticks in water so it doesn’t burn while grilling. You can use a grill pan too if you don’t have an indoor/outdoor grill at home.

I’m so happy it was a HIT!!! Although it turned out a bit yellower than expected (hehehe!) it was still a winner. The Kare-Kare mix worked so well with the peanut butter and really gave it a natural Asian kick. You can find this and other recipes at www.dmquickneasy.com.
